How do I setup the Welcome Email

Okay my search returned two phrases neither of which are the one I need to chang I don't think.

I see where i have a setting to send a wecome email when a new user joins, but I can't find where i set that up. How do I set up the subject and body of that email?

Right now I have a (Iguess you call it catagory) of entertainment. and under that I have food and downtown. I want Food and Downtown to be there own catagory with thier own box like the entertainment...

where is says Parent forum? there it is already set to "no one". I am trying to make the food forum its own "catagory" or what ever.
