i need to convert my database from utf-8 to windows-1256

please help me
i was working fine with utf-8 and my arabic forum
but now i discoverd that the tags that i have in my website are in jebresh
they are like this @#$#@$@$ and not arabic
so i need to change my chars to windows-1256

please can someone give a step by step how to convert my existing database to windows-1256

and i have more then 8000 posts and threads in my forum i dont want to lose them

please help
