removing options from registration page

i'm looking to simplify my reg page so only the required fields and a few preference fields show up.

can i just remove options from the registration templates? would that mess up anything? would the options i remove take on a default value?

Yup, that's all you have to do. In the db they will just be shown as their defaults.
