Is there any way for me to as the administrator of a vb to go in and edit the vb codes such as IMG that someone has posted in a message, but not gotten quite right? It seems that currently I can go in and edit the text of their message, but can't see their signature or any vb code that they may have put in.

The signatures don't show up because, unlike the UBB where they're appended on the message when it's created, in vB they're only appended when the page is displayed. (This allows for the per-user option of displaying other people's signatures, and the signatures are always up-to-date if someone changes theirs).
If you want to edit the vB code in a signature, you can do this by editing the users' profile. (In the Admin CP, go to Users > Find > Put in the username > On the page that comes up, there's an edit box for the signature). Otherwise as far as I have seen, vB code does appear when you go to edit a message. Which version are you using?
