How, where can I set that again all visitors can read everything?

You can chance the global permissions for Guest Users in the AdminCP under Usergroups → Usergroup Manager. Edit the Guest usergroup and make sure they have the "Can View Channel" permission.

You can change the permissions per channel by going to Usergroups → Channel Permissions. Edit any channel in red for the Guest Usergroup and make sure they have the "Can View Channel" permission.
