I would need to have "Latest Activity" tab to be the default tab on some pages when I on most of the site have does not have that as standard. Is that possible? I guess I can make the change and then save the page with a new templete? But is that correct or do I screw up something if I do that? And if it is possible, can I then reuse that template for other pages? And how do I do that?

Yes, this is possible. Each module has its own configuration through Site Builder.
For your forum channels, you would have to create a new page template before making changes. To do this, Edit the page, then save it. When it asks to "Overwrite the Template" say No and enter a unique name. Using the forum name is a good way to do this. Finish Saving. Then edit the page again and change the modules, their options, etc... The next time you save, tell it to overwrite the template.Translations provided by Google.

Follow up question then:
When I made a template that I like and that I want to reuse on other channels can I open a template I created earlier and "attach" to other pages? I can see that I can save a new template but I cant find the option to reuse an already created template.

You can change a page's template by clicking on the Template tab when editing the page. All templates will be listed there. Select the one you want and the page will change to that template. All module settings should be inherited through the template.
