Are all usergroups displayed in this number at the bottom of the forums?

Is there a setting to choose which usergroups add to or subtract from that number?

I believe all all posts & threads are included, otherwise they would be misleading numbers. There is no setting for it.

There's no setting for any of it - it would require custom code. You can try asking on www.vbulletin.org.
