What would make the number of online users jump up dramatically? For example, I went from 2 users online to 160 right when I was bombarded by spam threads.

Bots and spam networks scan for sites they can sign up to all the time. Make sure you're using relevant Q&A Human Verification for your site and moderate all new users (also make sure you have at least 5 different Q&As)
