which stylevar controls the font, font colour, button colour of the button ?

You are talking about the buttons that say "Save Changes" and "Reset Field"? Do a Search in Templates for ".actionbuttons .group .button" and you should see the stylevars for font, font color, and background.

I would like to know as since the upgrade our font colours have gone to White but not good for a white background. Tried changing everything but cannot seem to change the font colour in the side block of the user cp.

I found it at vbulletin-formcontrols.css
though I am still going through the stylevars

The way the default profile is shown has changed. You need to read this article - Setting the Default Profile Style.

finally found the stylevar to change the colour of the buttons

Common -> control_color -> Font Color for Buttons and Textlinks that look like buttons
