      Maitre d'hotel, Waiter/tress, servers, busperson are what restaurant suppose to have. The Maitre d'hotel to greet and seat you; Waiter/tress to take your order(s); Servers to place your food on the table; Busperson to cleanup after you have finish. In most hotel & regular restaurants they have drop 'Servers' and replace them with Waiter/tress to do added job and even in some upscale have removed 'Busperson' and also gave the addded job to Waiter/tress. I can see that they would bring back 'Servers', which get paid less back.

      You would not be left holding the bill without beening servered, just no need to interact with anyone to order food.

      I am sure high stakes poker will still have a true live dealer, but Casio operators are in it for the money.

      No, they are both easier to cheat from, cause randomness in computer are not random, just slightly harder to predict.
