To be honest .. my 2003 > check for updates: there are no updates

Even forced it didn't work. And I am on a mac too

The auto update never works for me on my Mac; I even manually forced a check to see if it would do it. I ended up just downloading and installing manually.
Congratulations on the death of vBulletin, Internet Brands.

Update finds update, says its installed, then 10 minutes later says their is an update available (the one it said it upgraded too) .

I just do a manual install.

It's not because you use a Mac or PC... It has everything to do with Firefox and its auto-update server. On my Mac, I happened to get auto-updated very quickly, it took about a day or so on Vista to get notified.
