I've been looking at some of these templates because I have a lot of international users at my board. Is it possible to have one or two forums be in different languages but all the rest be in English? (new to vB, just got it a couple days ago)

yes you can use different style or template for this

if you want the same style and only language use different template system

e.g

theme english
style default template english
theme french
style default template french
